New Concept Reflects Guests’ Desire for Casual, Approachable Cuisine

BELLEVUE, Wash.—(February 10, 2010)—Exciting changes are afoot at Twisted Cork—A Northwest Bistro, and it’s all thanks to loyal Eastside diners.

Twisted Cork’s revitalized, more casual concept has evolved directly from customer requests. Says owner Matt Bomberger, “The timing was perfect to implement suggestions that our guests have shared with us since the beginning of 0/8 Seafood Grill and Twisted Cork Wine Bar. Because we’re locally owned, and not a large corporate chain, we can adapt to meet our guests’ wishes. Listening to what they want is a driving force behind what we do and the direction we take.”

While maintaining a strong focus on gracious, informed service and the wine program that cemented Twisted Cork’s reputation and popularity, the concept goes beyond new executive chef Erik Carlson and his approachable, good-value menus. New and expanded programs provide guests with an array of enticements every day of the week:


Twisted Cork Tasting Club - Building on their award-winning wine program, which has garnered the highest award from Wine Enthusiast, is the Twisted Cork Tasting Club, an exciting addition benefiting loyal supporters and oenophiles. Membership is free, but discounts and rewards are nothing short of extraordinary. Benefits include:
• 10 percent off wine dinners and classes
• 20 percent off The Wine Buzz weekly wine tastings and Monday food purchases
• 30 percent off wines purchased to go
• 50 percent off one bottle of wine (up to $50 off) on Sundays (with purchase) and on wedding anniversaries

Happy Hour - With half-price appetizers and half-price wines by the glass, plus $4 draft beer and $5 select cocktails, happy hour is featured twice daily, from 3 to 7 p.m. and 9 p.m. to close.

Breakfast Happy Hour is offered 6:30 to 11 a.m. Monday through Friday and until 2 p.m. on Saturday and Sunday: Diners can sip popular breakfast cocktails for half price: Mimosas ($4), Bellinis ($4.50) and Bloody Marys ($5).

Monday Family Nights - From 4 p.m. to close, children 12 and under dine free from the kids’ menu with an adult entrée purchase.

Tuesday Steak Night - Guests can carve into a flat iron steak dinner for $12.95 from 4 p.m. to close.

Wine & Jazz Wednesdays is a double header, with The Wine Buzz, a weekly tasting of wines paired with small bites, held from 6 to 8 p.m. with sommelier Carlo Camilloni, and live jazz in the lounge from 7 to 10 p.m. The Wine Buzz is $15 – no cover charge for the music; no reservations necessary.

Live music continues on Friday and Saturday nights from 10 p.m. to 1 a.m. Twisted Cork is also now offering Live Jazz during Sunday brunch from 10 a.m. to 1 p.m.

Twisted Cork – A Northwest Bistro is located in Hyatt Regency Bellevue Hotel. The new Twisted Cork signage will be unveiled on the hotel’s west facade in late February.

BELLEVUE, Wash.—(February 5, 2010)— Hot on the heels of introducing Executive Chef Erik Carlson, Twisted Cork is announcing a new menu to accompany their exciting new direction.


The highly approachable, affordably priced bistro fare will feature a broad variety of expertly prepared, wine-friendly dishes. Influences range from Asia to the American Southwest, but the menu’s focus falls squarely on local, seasonal, Northwest-driven ingredients, including vegetarian options.


Inspired by customer preference and a growing health trend, Twisted Cork has increased emphasis on nutrition, especially on their kid’s menu. This is due in great part to Chef Erik’s background in nutritional cooking, which has helped drive the development and direction of the new menu.


“We wanted to maintain the same sophisticated Twisted Cork atmosphere and exceptional service that our guests expect, while introducing new dishes with broad, healthful, everyday appeal,” says owner Matt Bomberger. “We’re very excited about having Chef Erik join the team. His experience and credentials have allowed us to enhance the quality and variety of our offerings to best meet the tastes and needs of each and every one of our guests.”

Superbowl Recipe - White Wine Asiago Prawns from Twisted Cork's Executive Chef Erik Carlson


Kickoff your Superbowl party with White Wine Asiago Prawns
By Twisted Cork Executive Chef Erik Carlson

2 Tbsp. unsalted butter
1 pound whole prawns, peeled with tail cut off
1/4 cup white wine (chablis works best)
2 Tbsp. Asiago cheese, grated
Pinch of salt

1. In a pan over medium heat, melt the butter.

2. Place prawns in and saute until 3/4 of the way through.

3. Add white wine and allow it to reduce away.

4. Add in the Asiago and allow it to melt into a cream over the prawns.

5. Sprinkle a pinch of salt on if needed.

BELLEVUE, Wash.—(January 8, 2010)— A new era is dawning for Solstice Restaurant Group with the expansion and evolution of its Twisted Cork restaurant concept.

Scheduled to debut early next month, Twisted Cork will take over the space currently occupied by 0/8 Seafood Grill and evolve its wine bar offerings by providing a more casual and approachable dining experience, where adults and families can enjoy a new menu of affordable Northwest cuisine.

Matt Bomberger, a Bellevue local and owner of Solstice Restaurant Group, which also manages STIR Martini + Raw Bar, decided to introduce the more relaxed dining experience in response to changes in the booming Bellevue dining scene. With a recent spate of restaurant openings, the downtown area now offers more than 150 different dining options.

“0/8 Seafood Grill was competing with an incredible number of eastside fine dining restaurants, however our wine bar, - which is decidedly more casual, has always drawn a loyal and lively crowd,” said Bomberger. “Evolving the Twisted Cork concept to offer a bistro style menu based on local ingredients allows us to fill a niche – an Eastside destination where our guests experience the best of Northwest wine, cuisine, and service; all while keeping a familiar name.”

While the interior of the restaurant will largely stay the same, the menu will change to reflect a broader variety of expertly prepared, wine-friendly dishes with seasonal Northwest ingredients. Menu pricing will change as well, with entrées priced from $15 to $24, and small plates priced from $6 to $13.

One thing that will absolutely remain the same: Twisted Cork’s popular and award-winning Washington and Northwest focused wine program. The restaurant recently received the Award of Ultimate Distinction from Wine Enthusiast, one of only 36 restaurants in North America. Recent awards have also included the 2009 Grand Award by the Washington Wine Commission and the 2009 Award of Excellence, for the third year in a row, by Wine Spectator.

Shawn Lee to Oversee Both 0/8 Seafood Grill & Twisted Cork Wine Bar; Ellie Chin to Helm STIR / Martini + Raw Bar

BELLEVUE, Wash.—(October 6, 2009)—Solstice Restaurant Group announces that Shawn Lee and Ellie Chin have been hired as general managers at 0/8 Seafood Grill & Twisted Cork Wine Bar and STIR / Martini + Raw Bar, respectively. Each offering remarkable industry expertise, Lee and Chin will be responsible for staff training, human resources, and overseeing daily operations at the Bellevue Place properties.

Shawn Lee brings more than 20 years of experience to 0/8 & Twisted Cork. A Bachelor’s Degree in Hospitality and Restaurant Management led to positions as a banquet manager, a multi-unit restaurant manager, and General Manager and Director of Operations for a local restaurant group. While a food and beverage director for Sheraton and Hilton Hotels, he was named Manager of the Year multiple times. Lee has also owned a sushi distribution company and a full-service catering company.

Despite his breadth of experience, Lee’s philosophy remains simple and eloquent: “Food is a universal language, and it’s what bonds people together.”

The vivacious Ellie Chin is a household name on the local restaurant scene. Best known as a restaurateur, having launched Ovio Bistro and O2 in West Seattle and Market Street Bistro in Ballard, Chin began her gastronomic career at Canlis and also worked in some of Seattle’s most respected restaurants, including El Gaucho and Wild Ginger. Interest in catering and banquet services led her to management positions at Woodland Park Zoo, the Westin Hotel, and the Washington State Convention Center, presiding over events with staffs of 200 and guest lists numbering in the thousands.

“We are thrilled to have found two people with the depth of restaurant expertise and breadth of management experience that both Shawn and Ellie have. We are proud to welcome such qualified General Managers into our Solstice Restaurant Group family,” owner Matt Bomberger said.
