Delectable Preparations of Salmon from the Columbia and Copper Rivers Are Mouth-Watering Additions to Menus

SEATTLE, Wash.—(May 5, 2011)— For their last journey, Copper River salmon travel in style—via Alaska Airlines from Cordova. In a highly anticipated annual event that marks the kick-off of summer salmon season, the first shipment is due to arrive early morning, May 17, and will be heralded by news media, chefs and local celebrities.

Waterfront Seafood Grill and El Gaucho locations will be among the first area fine-dining restaurants to receive the revered delicacy, available from mid-May to mid-June. Last year, Waterfront’s Executive Chef Peter Levine was one of only three Seattle-area chefs selected to meet the plane and participate in the inaugural “Copper Chef” cook-off.

“Copper River King Salmon is one of the most prized fish in the world with an incredible story unlike any other. It is the star of the salmon world, and every season it’s anxiously awaited,” says Chef Peter Levine. “It becomes the most popular item on our menu, perfectly cooked, making halibut take second place for a while,” adds Levine. “Not only has Waterfront come up with a few new mouth watering preparations for this year’s run, but the chefs at each El Gaucho will also be featuring this delicious fish on their grills. I suggest you mark your calendars for this special time of the season!”

Preparations vary, but each restaurant will always have the choice of classic, perfectly charcoal-grilled salmon. Options include:

  • El Gaucho Seattle offers a Copper River salmon dish rich in flavor and texture: A generous filet is perfectly cooked over a hot grill, placed on a golden circle of lemon butter and topped with a sweet-and-sour mixture of pickled cucumber and red onion. The dish is drizzled with aged balsamic vinegar for a sweet-tart finish.
  • In a more classic preparation, bright with fresh flavors heralding the arrival of summer, El Gaucho Bellevue is featuring Columbia River King Salmon. The filet is grilled and served with a generous ring of crème fraîche, made with minced shallots, sour cream, Riesling and thyme. Before serving, the dish is topped with a relish of English cucumber, lemon and red onion for tang and color.
  • Using troll-caught Alaskan salmon, El Gaucho Tacoma will feature one of the most popular Northwest salmon preparations—roasted on a cedar plank.
  • El Gaucho Portland offers a fresh, savory dish with its spring Chinook (King) salmon. The filet is perfectly grilled and prepared with fish fumé, braised ramps and pancetta.
  • Waterfront Seafood Grill offers a handful of special salmon dishes, including a mouthwatering, grill-roasted Copper River King. Fennel and lemon are thinly sliced, placed next to the salmon, then all are seasoned with alder-smoked sea salt, pepper and olive oil, and finished with a splash of crisp white wine.

Waterfront Seafood Grill’s Chris Sparkman Named ‘Sommelier of the Year’ by Seattle Magazine

Talented Team at Waterfront Restaurant Takes Two Top Wine Titles

SEATTLE, Wash.—(April 28, 2011)— Waterfront Seafood Grill’s Chris Sparkman has added another honor to his lengthy résumé: The restaurant’s longtime general manager was named ‘Sommelier of the Year’ by Seattle Magazine (“Best Washington State Wines of 2011,” an article singling out distinguished wines and luminaries). Sparkman joins Waterfront’s Director of Wine, Kristin Young, who was given the same distinction at the recent Washington Wine Restaurant Awards for the Washington State Wine Commission.

To say Chris Sparkman’s life revolves around wine would be quite an understatement. Prior to relocating to the Northwest and joining Waterfront Seafood Grill, he served as sommelier and wine buyer in dining rooms across the country, including tenure at such esteemed restaurants as Commander’s Palace (New Orleans), Michael’s (Santa Monica) and Todd English’s Olives (Washington, D.C.). In the eight years he led Waterfront as G.M., he made wine enjoyment and education his mission, not only for guests but for the more than two-dozen staff he guided to first-level sommelier status or higher.

Sparkman was recently promoted from his G.M. position and now holds a special position as Wine Syndicate Director for Waterfront Seafood Grill and the four El Gaucho locations, overseeing all wine programs for Mackay Restaurants. Additionally, he and his wife, Kelly, are the founders of Sparkman Cellars, which has been going strong since 2004. The acclaimed winery located in Woodinville, Washington has yielded numerous highly rated, award-winning vintages.

SEATTLE, Wash.—(April 4, 2011)— “Outstanding wine knowledge and unbridled professionalism.” These are the apt words used by the Washington Wine Commission to describe Kristen Young, Director of Wine at Waterfront Seafood Grill (http://www.waterfrontpier70.com), whom the organization named Sommelier of the Year on March 25—the first female winner of the prestigious honor.

“Kristen's genuine love of wine and tremendous knowledge is exhibited by her passion for making sure each guest's experience at Waterfront Seafood Grill is enhanced by a perfect pairing or by encouraging them to try something new,” says Sivi Mennen, Waterfront’s General Manager.

Fittingly, the award was presented by Chris Sparkman, of Sparkman Cellars. Sparkman served as General Manager of Waterfront Seafood Grill from 2003 until 2010: He gained sommelier status in 2004, and over the years, he has lead dozens of staff members of his Waterfront team to sommelier certification. Sparkman currently holds a special position as Wine Syndicate Director to Mackay Restaurants (http://www.mackayrestaurants.com).

Kristen Young moved to Seattle from Ohio in 2001. After honing her passion for fine food and wine at such prominent dining destinations as Campagne and Nell’s, she opened Tilth with James Beard award-winning chef Maria Hines, overseeing the innovative restaurant’s wine program and front-of-house operations.

Kristen joined the expert staff at Waterfront Seafood Grill in 2006 and holds oenophilic accreditations from the Court of Master Sommeliers and International Sommelier Guild, as well as a bachelor’s degree in Business Administration from The University of Toledo. Kristen will serve as a judge in the 2011 Seattle Wine Awards in mid-April and the International Pinot Noir Celebration in McMinnville, Oregon this summer.

Passionate about educating palates and nurturing emerging wine lovers, Young conducts a range of “Wine Boot Camp” classes at the restaurant, such as the popular “Sparkling Wine 101,” most recently held shortly before Valentine’s Day and promoted on FOX affiliate Q13.

Kristen was not the only big Pier 70 winner in this year’s awards: Waterfront Seafood Grill itself was given a Washington Wine Grand Award, an honor commending outstanding restaurants that devote space on their menus to Washington wines. Restaurants are evaluated on criteria including the wine list, staffing and service, special promotions and overall wine philosophy.

Food and Wine Pairing - April 2

For those interested in learning the basics of matching food with wine and wine with food, the Food and Wine Pairing class is an excellent choice. From 4 to 5:30 p.m., Reg Daigneault, Director of the Wine Program at South Seattle Community College, is teaching guests how to create perfect pairings by tasting both good and poor food-and-wine combinations. Food paired includes two different cheeses, two meats, two vegetable choices, olives, smoked salmon, salad, and two dessert items. Cost is $35 per person, and includes all foods and wines. Art and Aperitifs - April 9

‘Lobster-Maine-ia’ Boils Over on Pier 70 for the Month of January, 2011

Formerly Known as Lobsterpalooza, Waterfront Seafood Grill’s Sixth Annual Lobsterfest Pays Homage to the World’s Favorite ‘Homard’

SEATTLE, Wash.—(December 22, 2010)—It’s the time of year everyone’s been salivating for—Waterfront Seafood Grill’s (www.waterfrontpier70.com) annual month-long celebration of the undisputed King of Crustaceans, the lobster kicking off January 6, 2011*.

But not just any lobster: This year, the supremely popular Maine Lobster (Homarus americanus) is featured in nine out of ten special dishes created by Executive Chef Peter Levine.

“In preparation for this event, we have the luxury of sampling lobsters from all over the world, but this year the Maine was really blowing all the other kinds right out of the water,” said Chef Levine.

Although the prized species can be found from the Canadian Maritime provinces to North Carolina, about half the annual catch of cold-water lobster in North America comes from Maine.  Because harvesters know that protecting the resource now will help to guarantee their livelihood in the future, diners can be assured that Maine lobsters are a well-managed, sustainable marine resource. 

However, crabby at being slighted, several passed-over lobster species have complained that a powerhouse ‘lob’bying effort on the part of the Maine lobsters themselves was responsible for the menu’s focus and the iconic event’s unexpected name change: Rock lobsters appealed to The B-52s for support, to no avail; a coalition of Spiny lobsters, a clawless species, lost all credibility when they threatened, ‘Oooh, I’ll give you such a pinch! ‘; and a handful of mildly outraged European lobsters shrugged, turned tail and headed to the nearest sand bar for a carafe of Chablis.

Sited on Seattle’s Pier 70, on Waterfront’s expansive and breathtaking deck, the Hootenanny was honored with the title ‘Best Restaurant Event Series’ in 2008 by the Washington Wine Commission, and it only gets better with each passing year:

Waterfront Seafood Grill, a favorite Seattle seafood restaurant, celebrates a decade of being a destination for locals and visitors alike. Today, the restaurant is flanked by the Port of Seattle headquarters and the Seattle Art Museum’s Olympic Sculpture Park with the bustle of Belltown and Seattle Center nearby, but it wasn’t always that way. Pier 70 has come a long way in its 108-year history.


Completed in 1902 for use by salmon packers Ainsworth and Dunn, the first sizable pier at the Seattle waterfront’s north end has also been a steamship company port, handling commodities that included cotton, soybeans, tea, rubber and liquor. During World War II, it served as a warehouse for the Liquor Control Board. From 1946 to 1955, it was the Seattle base of the U.S. Coast Guard.

Transformed into a shopping mall in the 1970s, Pier 70 also came to house a popular, notorious nightclub dubbed Pier 70. The pier achieved national recognition when the popular MTV reality series ‘The Real World’ was filmed there in 1998.


In May of 2000, restaurant guru Paul Mackay of Mackay Restaurant Group envisioned a yang to the yin of his famous El Gaucho Steakhouse. In a gutsy move, he opened Waterfront Pier 70. Later, he changed the name to Waterfront Seafood Grill and brought the site full circle to its salmon-centric beginnings.

Open since 2000, the Waterfront Seafood Grill, located on Pier 70 in Seattle, features outstanding fresh seafood accompanied by sweeping views of Elliott Bay and the Olympic Mountains. Winner of the Washington State Wine Commission Restaurant of the Year, the restaurant is open Sunday - Thursday, 5 to 10 p.m., bar open 4 p.m. until close; Friday - Saturday, 5 to 11 p.m., bar open 4 p.m. until close.
